Totally Spies Color-Changing Butterfly Pea Lemonade

The long awaited return of Totally Spies! is here!! In Season 7, the Spies have moved to Singapore where they meet Jerry’s daughter, Zerlina, (their new boss), make lots of new friends -including the cutest drones ever, and continue kicking butt!! Sam, Alex, and Clover live above the coolest Boba shop I’ve ever seen and that inspired this vibrant boba creation (colored with all natural ingredients only).

Ingredients: (4 servings)

4 cups water

1/4 dried butterfly pea flowers

2/3 cup lemon juice, (juice from about 4 1/2 medium lemons)

2/3 cup granulated sugar, 133 grams

Crushed or pebble ice cubes

1 bottle sparkling water (33.8 fl oz)

Helpful Tips:

The butterfly tea makes more than is needed for 4 servings of lemonade. You can save the extra tea to enjoy later or freeze it into ice cube trays to add color to other drinks.

Use berry or citrus sparkling water for even more flavor.

Directions:

  1. In a saucepan, bring 3 cups of water to a boil. Remove from heat.
  2. Stir in 1⁄4 cup of butterfly pea flowers, cover and let steep for 10-12 minutes (until water turns a dark blue color). Strain out the flowers and discard. Transfer the tea to the refrigerator for at least 1 hour to cool.
  3. In a separate bowl or large mixing cup, combine the remaining 1 cup of water, lemon juice and sugar. Stir until sugar dissolves and transfer to the refrigerator until you are ready to serve your drinks.
  4. Once you are ready to serve, pour 1⁄2 cup of the concentrated lemonade into the bottom of each glass. Add crushed or pebble ice to cover the lemonade. Pour 1⁄4 cup of the blue butterfly pea tea over the ice. Cover once more with ice and top each drink with sparkling water. Garnish with fresh lemon and enjoy 😊.
