Back to school time equals lots of lunch prep. If you’re looking for something super fun and delicious to break up the same old staples this cute caterpillar lunch is just the thing! The Guacamole Ranch Roll-Ups are an easy way to sneak extra veggies into your kid’s school day, and can be made the night before to save time (little ones might also enjoy assisting in the process of filling and rolling the wraps).
Just like Good Foods Guacamole, this lunch is vegetarian and packed full of wholesome ingredients (you can make this recipe dairy free as well by substituting the cream cheese and ranch dip with dairy free options).
The decorations were inspired by one of my favorite childhood books, The Very Hungry Caterpillar, and are easily added using a few more veggies, your favorite fruit, and cookie cutters. Pack with a Good Foods Tableside Chunky Guacamole for dipping. Thanks to the individual containers it’ll stay fresh (and green) until lunchtime.
